NOW, let’s ramp up this basic broth recipe Spice Boys style!! I like to take left over meats (some freeze in advance and after a good meal with all its pre-cooked flavors) and flash sear in a pan for that fresh roasted flavor before adding to the water.
1-2 lbs of your favorite meat including bones and cartilage (Chicken, Beef, Pork or Turkey)
8 Quartz of Water depending on size of stock pot
1-2 Onions, roughly chopped
1-2 Carrots, roughly chopped
1-2 Celery stalks, roughly chopped
4 Cloves of Garlic, smashed
1 Bay Leaf
1 Thyme Sprigs
1 Pinch of Red Pepper Flakes
2 Tablespoons of Pikes Peak Grind – Fresh Ground
Other natural ingredients that can add a fresh amazing flavor to your homemade stock are Cloves, Ginger, Basil and Lemongrass. Just chop or slice into the stock with the other ingredients.
Combine ingredients and fresh grind Pikes Peak Grind to taste. Bring water to a boil over medium-high heat. Lower the heat and let simmer on low for 4 hours or overnight. Once ready, strain the stock through a fine-mesh sieve or colander lined with unbleached cheesecloth into a heat-resistant bowl. Bring to room temperature before covering and store in the fridge overnight. Next day, skim off and discard any fat that has risen to the surface, and refrigerate or freeze.
