Recipe - Caraway Roasted Potatoes
Caraway seed is a common flavoring for rye breads, sauerkraut, sausage, cheese, cabbage, and soups. Try it freshly ground in carrots, potato and cabbage dishes.
Caraway Roasted Potatoes
12 - 15 baby red or gold potatoes,
3 Tbl olive oil,
1 Tbl butter,
1 Tbl caraway seed,
1 Tbl minced garlic,
1 Tsp freshly ground course black pepper,
½ tsp salt
Heat oven to 350. Wash potatoes and cut into half or quarters. Place potatoes on a clean sheet pan and spread out so the potatoes are evenly layered. Let the potatoes air dry for 5 minutes making sure they do not start to color. Place potatoes in a large bowl and add toss with remaining ingredients. Combine well. Return the potatoes to the sheet pan and place in oven for 25 - 30 minutes.
